Dailey Happy Hour - It's Wine Time Featuring Dakota Shy Wine & Cheese Pairing

Today’s Dailey Happy Hour is in honor of Destin Charity Wine Auction Foundation. The last weekend of April is traditionally the Destin Charity Wine Auction, but due to Corona Virus the 2020 Auction has been moved to August 21-22, 2020. 

Last year, the Destin Charity Wine Auction raised $3.6 million for children in need in Northwest Florida! DCWA is ranked one of the top 10 wine auctions in the country by Wine Spectator and has become an important part of South Walton and Destin’s non-profit community raising funds for 16 local charities to support specific projects and programs that benefit children. 

 

In honor of this year’s auction, Newman-Dailey is featuring Dakota Shy wines. The 2020 Honorary Vintner is Todd Newman, co-founder of Dakota Shy. Todd is a long-time supporter of DCWAF and a regular guest of Newman-Dailey. Dakota Shy is a small family-owned winery featuring limited production wines. Producing only 3,000 cases annually, Dakota Shy sells direct to customers through its wine club.

This is Dakota Shy’s only white wine. It is an ideal summer wine for the beach. It is produced from a single vineyard with 100% Sauvignon grapes. Wine enthusiasts will taste sweet cream, white peach ad citrus blossom.  A long, fresh, complex and deeply flavorful wine, it has bright refreshing acidity on the finish. 

 

Chan’s Wine World Suggested Cheese Pairing: Humbolt Fog Goat Cheese

 

This is Dakota Shy’s flagship Cabernet. This wine is a great value for the dollar at under $100, it can compete with Napa Wines priced much higher. This wine is a blend from three mountain vineyards. This 2018 vintage was a great year for wine and the second vintage from the new winery that opened in Napa in September 2017. This wine features aromas of cedar, tobacco leaf, lavender, currant and dark cherry and flavors of dried herb, black currant, cedar and cocoa. It is rated among the top 100 wines in the world by Wine Spectator. 

 

Chan’s Wine World Suggested Cheese Pairing: Karst Cave-Aged Cheese

 

This is Dakota Shy’s longest cab in production. It is 100% cabernet grapes from one single vineyard -Steve Mould’s 10-acre estate. This wine features aromas of violets, black currant, cedar, tobacco, and cocoa and flavors of dark fruit, spice cake, bittersweet chocolate and cocoa with wonderful fig, licorice and black currant finish at the end.
